Quick and easy cheesecake

This cheesecake recipe is quick and easy to follow. Make it your own by adding fruits, swirl in chocolate or sprinkle in nuts. The options are endless.

Important Baking Note* the use of a Bain Marie or Water bath is essential in baking a cheese cake. It will prevent your cheese cake from drying out and cracking during the baking process.

Ingredients
1lb cream cheese
3 cups sour cream
1 cup sugar
1 tbsp cornstarch
3 large eggs
1 ½ teaspoon vanilla extract
¼ teaspoon salt
3 tbsp butter
6 graham cracker sheets

Equipment
9” spring form pan
Roasting pan big enough to hold spring form pan
Mixer with whisk attachment
Rubber Spatula
Aluminum foil
Medium sauce pan
Large zip lock bag

Preparation
Preheat oven to 350º
Add water to roasting pan and put in oven
Wrap spring form pan with foil to prevent leakage
Grease the inside of spring form pan

For the crust
Add graham crackers to bag
Crush crackers into small pieces
Melt butter in medium sauce pan
Add crushed crackers to pan
Toss crackers and coat with butter
Press crackers into bottom of spring form pan to for even layer

For the cake
Add cream cheese and sugar to mixing bowl and beat until smooth 3-4 min
Add cornstarch to bowl
Add eggs one at a time
Add vanilla
Add salt
Add sour cream until blended

Pour ingredients into spring form pan
Place spring form pan in roasting pan in oven
Bake for 45 min
Turn off oven and allow cooling for 1:00
Remove from oven and allow cooling for 2 hours
Wrap spring form pan with foil and place in fridge overnight

The next day
Remove cake from the refrigerator
Have serving plate ready
Un-mold cake put on serving plate
Garnish and serve

Variations for this recipe:

Banana Cheesecake
1 cup mashed bananas replaces 1 cup sour cream

Chocolate swirl
Melt ½ cup chocolate
Add ½ cake batter to spring form pan
Drizzle chocolate in center and around spring form pan
Add remaining cake batter to pan
Add remaining chocolate to pan
Using a paring knife swirl chocolate into batter

Fruit
Add ½ cake batter to spring form pan
Add fruit puree to spring form pan
Add remaining cake batter to pan
Add remaining fruit puree to pan
Using a paring knife swirl fruit puree into batter
