Tilapia goujons with sesame tartar sauce
Tilapia is a great fish and stand up well to many preparations. It is a flat fish so y
ou will get four filets from one fish.
Ingredients
2 lbs Tilapia fillets
½ cup dried cilantro flakes
2 cups Panko bread crumbs
½ cup dried oregano
½ cup parmesan cheese
2 eggs
½ cup dried parsley flakes
¼ cup heavy cream
Salt & Pepper
Oil for frying
Equipment
Large Sautee pan
Wire rack
Fish spatula
8-10” Tongs
Zippered freezer bag
Preheating: Heat oil in large sauté pan to 375°
Preparation
Split tilapia fillets down the center the in half
Cut each side lengthways in ½ inch pieces
Add Panko, parmesan, cilantro, oregano, salt, pepper and parsley to freezer bag
Add tilapia to freezer bags and toss until completely coated
Add tilapia in batches to the hot oil
Fry until golden brown
Remove from oil and place on cooling rack with paper towel underneath the rack.
For Service
Put out a small bowl of Sesame Tartar garnish with chopped parsley Arrange tilapia pieces around bowl

Homemade Sesame Tartar Sauce
Ingredients
2 egg yolk
2 tsp lemon juice
1 tsp salt
1 tsp Dijon mustard
½ cup sesame oil
2 tsp sesame seeds
1 cups cold vegetable oil
2 tbsp sweet relish
Preparation
Combine vegetable oil and sesame oil
Add yolks salt lemon and mustard to bowl and whisk together
Continue whisking and stream in oil until incorporated
Whisk until sauce thickens
Fold in relish and sesame seeds and put in bowl
Allow to set for an hour before service
Enjoy!
